Butternut Squash recipes?!

So I bought some fresh cubed and peeled butternut squash today, AND have NO CLUE what to do with it. Any tasty, quick recipes out there?

    You can boil it or steam it, but it turns out a little bland in my opinion. It's better roasted, which allows the sugar in it to caramelize a bit and develop more flavor.

    Roast, it and blitz it with some veggies to make a tasty filling soup !!, it's also good if you roast it with spices and have it as a side dish with a meal

    Hmmm maybe not super quick, but definitely one to save for when you have time - I made it a couple weeks ago and it was to die for...my whole family loved it!!!! :love:

    Roast it with frylight and mix into a risotto( rice, white wine, stock, onion, seasoning, tarrogan, finished off with small portion of grated parmasan) top with a little bit of crumbled goats cheese and serve with a huge green salad. Yum yum.

    Roast it and then mash it and put it on pizza crust with either blue cheese goat cheese or fresh mozzarella. Spring rosemary on top and put some cooked onions on. DEVOUR so delicious :)

    I had this for dinner tonight, made it with low fat sausages and it was delicious! I tweaked the recipe a bit though, I used chickpeas instead of beans as I don't like beans and obviously used butternut squash instead of pumpkin.

    I've made this twice, and both times even my kids loved it.


    1 small butternut squash, cubed
    1 1/2 tsp nutmeg
    1 tbsp extra virgin olive oil
    2 medium yellow onions, thinly sliced
    1 green apple, peeled and sliced
    3/4 cup grated lowfat Romano
    1 1/2 cups grated lowfat fontina
    1/4 cup chopped fresh parsley
    fresh basil leaves
    4 whole wheat pitas

    Rub olive oil onto 1 side of whole pitas. Divide squash, apples, and oinions among pitas. Sprinkle with nutmeg. Top with parsley, basil, and cheeses. Bake @ 375 degrees until cheeses melt and squash and apples are tender/crisp.

    The hard thing about preparing butternut squash is the peeling and dicing, so you were smart to buy it already peeled and diced!
  • I found this really good recipe once but unfortunately can't find it right now. But it was a mixture of butternut squash, quinoa, pumpkin seeds and some other things. I'll try to find it and post it. It was delicious.
    Love butternut squash though. :)

    Even my husband, who doesn't like butternut, loves this.

    The recipe calls for slices, but you could easily do it with cubes, just watch the cooking time.

    You can also just roast it with a little olive oil and pepper.
