I made this for dinner instead of Sheppard's pie since I lacked corn, green beans, and potatoes! It's really high in sodium, unfortunately, because I used canned carrots. No fresh veggies in the house. :ohwell:
I used a pound of grass fed ground beef, a can of sliced carrots (fresh would taste delicious), half a medium onion chopped, and topped it with about half a can of queso dip medium.
It made 4 servings in an 8 or 9 inch square casserole dish.
Calories: 295
Sodium (for canned): 1069
Fat: 14
Protein: 26
Iron: 10
Fiber: 5
According to my hubby (who topped it with ketchup), it tastes like a pasty. :blushing:
Pretty good for just tossing something together on the fly. :drinker:
