Chicken tacos and sweet potato hash for dinner!

I was super excited and impressed with my dinner so much tonight that I figured I'd put up a post and picture about it! If you want the recipes just let me know :smile:

Homemade shredded chicken tacos with cheese and salsa on a flour tortilla and a side of sweet potato, black bean, and corn Mexican hash! It was MUY delicioso and only a little over 500 calories too! (I'd substitute whole grain/fiber rich tortillas next time!)

    We eat a whole lotta tacos here! How did you make the hash?

    Sauteed some garlic and onion first in some olive oil. Then cut up sweet potatoes and added those in along with frozen corn and a rinsed/drained can of black beans. The calculations for each are below:

    Makes about 6 servings:

    2 medium to large sweet potatoes
    3 cloves garlic
    1/2 yellow onion
    1 tbsp. olive oil
    1 15oz can black beans (drained)
    1 cup of frozen corn
    1 tbsp ground cumin
    1 tsp oregano

    After the garlic and onion browns up a bit, add in the rest of the ingredients along with a bit of water that will be soaked up.

    It's ready in less than 10-15 minutes!
