Lighter Buffalo Chicken.

I was craving buffalo chicken this evening, so I ad-libbed, and surprisingly it was successful.

Fair warning, there's a ton of sodium in Frank's hot sauce so this is not for sodium sensitives or those trying to manage fluid retention.

4tbsp Franks Hot Sauce
2tbsp fat free sour cream
1tbsp white vinegar
dash onion powder
dash black pepper
(optional) 0.5tbsp olive oil
1/4 cup Italian breadcrumbs

Stir it all together.
Thaw and butterfly a 6oz chicken breast.
Put chicken and sauce in ziplock bag and coat. Let marinade in fridge for an hour.
Bake @ 375 for 25 mins or until chicken is white through when cut.

I ate it on a couple of sandwich thins with lettuce and a sprinkle of feta and some walden farms calorie free ranch.
