If I am using a packet mix eg. Lamb Casserole ... If it says the packet is 104 calories does this include the onion and pepper that the instuctions tell you too add or is that just the packet and you need to add in the additionals into your calories?

That wouldn't include the onion/pepper etc. Would just be the mixer ingredient nutritional info.0
