    I make my own barbeque sauce (I have a slow cooker recipe for it), put it in the crockpot, and then cook the chicken slow until I can shred it with a fork. Then I shred the chicken breasts, mix it all into the sauce a little more, and let it cook a little longer so everything soaks in. YUMMMMMM.

    make pretzel chicken. its really easy crush pretzels up, dipped chicken in egg whites, dip chicken in pretzels. bake at 350 for around 15 minutes (depends on size and thickness of chicken. i cut mine into strips for easy dipping for kids). serve with honey mustard and veggies. its yummy and super fast.

    I do the same thing with Cheeze its instead of pretzels. My kids can't get enough of it when I do it.

    Put boneless skinless chicken breasts into crock pot. Cover with green pepper and onion slices. Top with fat free (or whatever style you prefer) Italian dressing and stewed tomatoes (I used the Italian flavored ones). Cook on low. Enjoy! :flowerforyou:

    Sorry the address is so long... But a friend of mine that did the Advocare challenge emailed me this cookbook and I love it! It has great ideas made with ingredients that I have on hand most of the time. It doesnt have nutritional info but I prefer to enter my recipies with the actual ingredients that I use as I find I can generally make things even lower calorie/fat than listed on typed nutrional info. Hope you enjoy - the Chicken Azteca has been on almost weekly rotation in my house - its yummy!

    You can cook chicken breast in your favorite salad dressing. We really like Catalina and Sun Dried Tomato!!! I may have to experiment with others.

    I just wanted to say a HUGE thank you to everyone that posted recipes on this thread....i've finally found a way to quickly throw together a meal that EVERYONE in my house will eat....

    it's been a fantastic couple of days.
  • I am cooking 3 boneless breast in the crockpot right now with a cup of chicken broth. I will shred it at the end and use it through out the week for chicken salad sandwiches and chicken quesidals for the kids.

    I did the salsa chicken last weekend but my kids were not big fans of it.

    The best part for me is you can freeze the cooked chicken and I can use it later in chicken pot pie.

    Mexican crockpot chicken
    Ingredients:
    1lb. Boneless Skinless Chicken Breasts (I put mine in frozen)
    1/2 cup of salsa
    1 bag frozen sweet corn
    1 can of black beans, drained and rinsed ( I will use 2 cans next time)
    1 can of Rotel Tomatoes with Green Chilies
    Chili Powder
    S&P
    1/2 block of cream cheese (I use 1/3 fat free)
    1 small onion diced

    Directions:
    Put chicken in crock pot and cover with all ingredients except for cream cheese.
    Add in chili powder and S & P to taste. I sprinkle it all on the top and add more later if needed.
    Cook for 3-4 hours on high, 7-8 hours on low.
    Shred the chicken and mix it all in along with the cream cheese until melted. Let cook for another 15-20 minutes until heated through.
    Serve over rice or in tortillas as tacos/burritos.
    I usually top it with some shredded lettuce and diced tomatoes.

    Makes 6 Servings.

    Bacon Ranch Chicken:
    1 lb Chicken breast
    Bacon (2-3 strips, cooked and crumbled)
    1 can Cream of Chicken Soup
    1 packet of ranch dressing mix
    1 cup sour cream

    Combine all in crockpot on high for 3.5 hrs. I usually shred the chicken and eat it with wheat thins or over mashed potatoes. It is very thick and could be eaten as a stew too. The breast could easily be left whole for a meal with a side. It is even better leftover! I have a picky household and everybody likes this one.

    The chicken breaded in cheez its sounds so yummy! I bet my DD would love this :)
