One of my fav recipes!:
Pineapple Black Bean Chicken
5 or 6 chicken breasts
1 jar of salsa
1-2 cups fresh of canned diced pineapple
1 can of black beans-drained
I usually put it in the crock pot in the morning on low and then shred it later
So good with just lettuce or on corn tortillas!

I used to take country style ribs and soak them overnight in a 50/50 mix of pineapple juice/BBQ sauce and then pour it all in the crockpot and cook on low all day. If they were not just literally falling apart after they cooked all day I would sometimes finish them on a hot grill for about a minute on each side. I am sure it would work for chicken. You would need to calculate the calories. I am also sure it would go well either with some type of beans or rice or on bread/tortillas/etc...0

I make my own barbeque sauce (I have a slow cooker recipe for it), put it in the crockpot, and then cook the chicken slow until I can shred it with a fork. Then I shred the chicken breasts, mix it all into the sauce a little more, and let it cook a little longer so everything soaks in. YUMMMMMM.0

make pretzel chicken. its really easy crush pretzels up, dipped chicken in egg whites, dip chicken in pretzels. bake at 350 for around 15 minutes (depends on size and thickness of chicken. i cut mine into strips for easy dipping for kids). serve with honey mustard and veggies. its yummy and super fast.
I do the same thing with Cheeze its instead of pretzels. My kids can't get enough of it when I do it.0 -
Put boneless skinless chicken breasts into crock pot. Cover with green pepper and onion slices. Top with fat free (or whatever style you prefer) Italian dressing and stewed tomatoes (I used the Italian flavored ones). Cook on low. Enjoy! :flowerforyou:0
