Questions on if this really works

I just started a week ago and just wanted to get some thoughts on if this really does work. I am counting my calories and working out, but I just wasn't sure how the calorie thing works.... everyday I've been under my goal and the days after I work out, then I am a few hundred under my goal of 1200. For those of you who have been doing this for a while... have you seen a difference if you eat those calories in "bad food" compared to "good food"? Does it make a difference in your weight loss or is it just the calorie counting that matters? Should I be eating all the calories it tells me I should or is it ok being under even if a couple days, I didn't even hit the 1200 mark... close but not quite.
I just wanted to get advice from you all that have been trying this for a while to see what you guys think about it.
