    oh, and another favorite is cut up romain tossed with fresh spinach, sliced raw almonds, crumbled goat feta cheese, and sliced dried apricots or figs, with some oil and vinegar dressing.:love:

    I eat wraps almost every day. I like the La Tortilla Factory brand, personally. But I make all kinds of different wraps...tuna & spinach, black bean burrito, turkey, veggie, whatever. I like them b/c they are super good, and extremely versatile.

    Since I work nights and I'm a waitress (which makes it hard to resist food! haha) I often eat dinner for lunch. That way I'm full and won't be tempted at work, and when I get home at night I can just have something light and not go crazy and binge.

    Today for lunch I had a 6 oz chicken breast, a sweet potato and peas and carrots. It was delicious! Better than it would have been at a restaurant, and cheaper too! You can buy a giant bag of frozen chicken breasts for like $7 at Wal-mart...good for a week!

    I buy those Hilshire Deli Selects and slap those on some bread with cheese and veggies with a bottled water.. and BAM.. Lunch!
    I also favor Tuna Sandwiches, Chicken salad sandwiches, boiled eggs. Yum, I'm hungry already!

    are those hilshire deli selects high in sodium? I have to watch the sodium very close.

    I take a whole wheat tortilla (make sure to check calories on these - some have a lot). The I put in organic deli turkey and whatever veggies I have (red pepper slices, romaine, onion, shredded carrots). These are really filling and healthy. Or I drain a can of light tuna and substitue that for the turkey and add the veggies.

    Another favorite is a portabella mushroom marinated in some basalmic vinegar/olive oil/basil. You can grill or sautee them up ahead of time along with some sliced yellow & green bell peppers and just keep them in the fridge. Then when lunch time rolls around. Heat up enough in the microwave to stuff it into a pita pocket with some lowfat cream cheese.

    Very tasty!

    It sorta tastes like a fajita. I also forgot that sometimes I add some sliced tomato as well.

    Lately, I have been eating a lot of sandwiches. PB&J on whole grain bread with some whole grain tortilla chips and salsa and fruit or cottage cheese.

    I also love to toast bread and put turkey, tomato and avocado on it! SOO good! Or a Joseph's tortilla with hummus and fruit and maybe some crackers

    I also love a salad with mixed greens, sliced pear, a tbsp of nuts (almonds or walnuts) and some dried cranberries with a lighter balsamic dressing. I really like the Kraft Asiago/parmesan light balsamic! Delicious and tons of flavor. Sometimes I put a bit of gorgonzola or feta on top (when not pregnant!)

    A great "warm weather" dish I love is to mix broccoli slaw with the Newmans Own Lighten Up Asian-Sesame dressing. SOO good! You can add some sliced almonds or maybe mandarin orange and grilled chicken to make it more of a meal. I will often have the slaw mixed with the dressing as a side dish with my sandwich or something.

    I cook up a whole bunch of boneless chicken breasts on the weekend and package them in baggies (1/2 a breast in each) During the week I take one baggie, a container full of veggies ( celery, carrots, radishes, broccoli, cauliflower) and some hummus.

    That is an awesom lunch

    Lately these are my favs (you can tell I love cheese when you read them LOL)

    Baked Potato w/ a little chedder and salsa w/ cut up veggies
    greek salad - I use plain yogurt and greek seasoning as a dressing
    taco salad - romaine, salsa, a little chedder, cilantro
    pizza wrap - leftover spaghetti sauce, Europe's Best Mediterainian frozen veggies, and a little mozza
    canned tuna (either with red onion or avocado) sandwich on Flatout Wrap w/ cut up veggies and a slice of cheese

    They are awesome.

    I eat a lot of salad with tuna and red wine vinegar, hard boiled egg, etc... left-overs a lot. I try to stay high fiber, high protein, and low sodium.

    BTW, my fiance asked me if I wanted some of his left over frozen pizza - it had a whole grain crust - I looked at the facts and 1 slice had 980 mg of sodium! :noway:
