artichokes

Cut off the stem and cut it lengthwise. Pull off the outside leaves. Cut off the tips of the leaves that are left. Boil for 40 minutes to an hour, or until you can stick a knife in (if you can't, you won't be able to eat it no matter how hard you try). Then just peel off the leaves one by one and eat the insides (put the leaf between your teeth and pull), perhaps dipping in a lemon juice/olive oil mixture. Then when you get to the heart, where the leaves are thin and white, take the whole thing and cut it in half. Scrape out the fuzzy part and purple pointy leaves (I'm sure they're full of fiber by they're nothing short of painful to eat! ) and eat the rest. Also eat the inside of the stems as they taste just like the heart and bottom of the artichoke. Yum. You can also pull out the entire heart before hand and stuff them but I've never done that.0
