My church is having a Ladies Tea and we are to bring a brunch item to share. Now that I am on this program to lose weight, I'd like to take something I can enjoy as well as the other ladies there. Any ideas??? Thanks!

    Ingredients
    cooking spray
    1 scallions , sliced thinly
    4eggs
    2g fresh plum tomatoes , thinly sliced
    1/2cup shredded mozzarella cheese
    1oz grated Parmesan cheese
    1/8tsp black pepper
    1/8tsp garlic powder (optional)
    4tsp fresh basil , chopped



    Directions
    1 Preheat broiler.
    2 In medium bowl, whisk eggs, basil, garlic powder, and pepper until well blended.
    3 Coat 9" oven safe sauté pan with cooking spray. Cook the scallion for about 1 minute over medium heat. Reduce heat to medium-low and add eggs.
    4 Place tomato slices in top of the eggs. Sprinkle with mozzarella and parmesan cheeses.
    5 Cook approximately 4 minutes, or until the bottom is cooked and the top is still creamy. Place pan under broiler for 1 minute or until the top is puffed and cooked.
    6 Remove from broiler, let rest 5 minutes. Using a spatula, remove frittata to serving plate and cut into 4 pieces, or serve from skillet.
