Suggestions to make my mushroom and red pepper omelette brea

I'm looking to increase the protein I'm having while reducing my fat intake by a small amount. So I'm thinking of doing an omelette which has a reasonable amount of protein that I sometimes have for breakfast a bit differently - basically same ingredients without using any oil/butter etc to fry them (I normally use olive oil) in order to reduce the overall fat content
My plan is to have scrambled eggs instead of frying them. But I'm not too sure what to do with the peppers, mushrooms and onion. I know you can fry mushrooms if need be without oil, but they get a bit shriveled up and dry like that. As for peppers and onions I suppose I could have them raw but any ideas how to quickly cook them up without using oil?
Any ideas or suggestions would be appreciated.

You could try steaming them in the microwave.0

You can steam them in the microwave; this holds in most of the nutrition as well as not adding calories! Just put them in a casserole dish with a lid, or a bowl that you can cover with plastic wrap, drizzle a little water in, an microwave them until they're as soft as you'd like.0

I also have switched to olive oil "pam" spray...not bad at all for frying an egg!!0

It is helpful to have all of the vegetables cooked beforehand. Browned and shriveled mushrooms are delicious, they really need that unless you prefer raw mushrooms.
When I make a veggie scramble I use a little spray oil and get things cooked in the pan first on a higher temp, then I add the beaten eggs and turn the temp down to med-low. If you really don't want to use oil (which makes them delicious) just add a little water to steam them in the pan.0 -

I always order egg whites with tomato and mushroom... they cook the eggs and the tomato and mushroom together and they end up being warm, but not soggy so they have a little bit of crunch left and its divine.0

You could sub mushrooms for the zucchini and make 4 servings and reheat as needed. I made one and we had it for dinner one night and breakfast the next day. Light, lots of veggies, and a good deal of protein.
If you just want to cook them without oil, cook them in a pan and add a little water every time the pan is dry until they are the consistency you want.0 -
Most grocery stores (I got mine at Walmart) have a microwave omelette maker for under 5 bucks...I love mine. Just put the eggs in (no sprays/butter) required after you mix them and nuke for a few minutes. I add my veggies in with my egg mix and they are usually perfect when they come out. Its one of my must haves...I actually bought a 2nd one just in case one is in the dishwasher still0

I saute the mushrooms til they let out their juices on their own in a non stick pan, then toss in the onions and whatever else I'm sauting along with them. If they need a little help I use a quick shot of cooking spray.
I agree with having the veggies cooked first, then toss the eggs on top and scramble.0 -

Well this is what I did.
The end result was a qualified success. I actually put a little too much water in I think. I microwaved the veggies for about 10 minutes in total. Then I added the eggs. The red peppers were actually very tasty done this way. The mushrooms were a bit bland though - perhaps they needed a bit more cooking. Taste wise overall it was ok and perfectly edible - to be completely honest - not as tasty as a normal omelette - basically I suppose fat tastes good - so without the olive oil it had a little bit less taste. I might experiment some more with this dish to perfect its taste while keeping the fat levels under control.
Note I agree fully with medennison123 who said we need some healthy fats in our diet. I'm just cutting back a small bit as I've gone over my fat allowance for past couple of days so trying things out.

I just put in a bit of water in the frying pan with the mushrooms and onions, and put a lid on for a couple of minutes. Then I take the lid off and keep cooking till the liquids evaporate. It steams them and they taste just like they would with the oil. Hope that helps0
