Has anyone here read the book "Mindless Eating" by Brian Wansink? If so, has it actually helped you to make progress in eating healthier?
I'm struggling with my will power when it comes to junk food and can't tell if I am simply not trying hard enough, or if learning more about my apparent "inability" to have self-control could help me to better control it.

I haven't read "Mindless Eating", but it looks interesting. I might need to pick it up.
I have read and can recommend "Savor: Mindful Eating, Mindful Life" by Thich Nhat Hanh and Lillian Cheung.
It looks at ways to apply the daily practice of mindfulness to eating and beyond as a way to control appetite and help focus on living more mindfully overall.
It has made a great deal of difference for me.
