Lunch time meals
Hey,
Your all very helpful on here so I thought I'd try and get some good stuff out of you all haha!
My job relies on me being on top form, energentic and not feeling hungry all day. I work with children with special needs, in particular twins with autism. Let me tell you now they keep me on my feet all day and give me no resting time. So my 30 minutes lunch break is like going to Mecca!! I start early and finish late so I don't have lots of time to cook fabulous meals to take in with me, and when I do have the chance to do this I tend to waste a lot of it due to it only being me.
I am looking for great lunch time meals around 250 calories. They need to avoid fruit and raw veg such as peppers, tomatoes and carrots due to allergy reasons. Something I don't need to faff about with and something thats going to get me excited to eat it lol!! At the moment I generally take in a caesar salad with light sauce, but I would like to change it a bit.
Please send me your magical recipes! Feel free to add me and give me a slap on the knuckles if I look to be tempted by chocolate. Many thanks

I make soups and freeze in muffin tins (one tin with chunks and one tin with sauce, when frozen bag up) then i grab one of each to heat for lunch. Or i make salads (one of my favorites). Most of the time though i make leftovers from the night before. I also like chicken breasts re-heated in the microwave.
If i cannot think of anything else i will bring wheat thin fiber select crackers and 1/2 cup cottage cheese and eat together. With that i usually bring a veggie and a fruit to eat. Or just a sandwich (rare though as they are not my favorite).0 -
First of all, thank you for working with special needs children!! I have a 5 year old son who is autistic, so the subject is close to my heart. I know how demanding it can be! :flowerforyou:
Do you have a day or two off? If so, this is what I do: I make 1 or 2 recipes for my lunches on my day off and divide it out 5x so it's all ready to just grab and go. I use my crockpot a lot: soups, chicken, etc. I love putting a few chicken breasts or a whole chicken in with a few seasonings, let it cook all day, then shred it up and make things like quesadillas, chicken salad, mexican chicken tortillas, soups, etc.
Some of my favorites:
Pea soup: 1 bag of dried peas, rinsed; add to crockpot, fill with chicken broth, add packet of dry onion soup mix (some onion and carrots if you want/can); cook on low 8-9 hours.
Salad with lettuce, cooked chicken (cooled) and sweet balsamic vinaigrette (which is a new discovery for me and I LOVE it!) I add sliced strawberries to mine but you mentioned no fruit.
Quick tortilla wraps: shredded chicken (I put taco seasoning on mine), 1 Tbsp shredded cheese or a wedge of laughing cow cheese, lettuce on a whole wheat tortilla. If you season the chicken well you won't "need" Western dressing, or you can use salsa which is pretty low cal.
Breakfast wrap: scrambled egg/s, 1 Tbsp shredded cheese, onion, on a tortilla.
