Am I the only one who hates eggs? I don't like them cooked ANY way but I forced myself to eat them for breakfast for a while. Then I ventured out and discovered pumpkin waffles! They are probably my favorite food now so I figured I'd share the recipe.
1/4 c. canned coconut milk
3/4 c. almond flour (or flour if you aren't paleo)
1/2 c. pure pumpkin
1/2 c. coconut flakes
2 eggs, slightly beaten
2 tbsp. real maple syrup or honey
1 tbsp. vanilla
1/2 tsp. nutmeg
1/2 tsp. cinnamon
1/8 tsp. baking powder
1/2 tsp. salt
Cook in waffle maker, of course and enjoy! I drizzle them with honey or maple syrup, depending on what i have on hand. Also, I just tried putting fresh blueberries in some today and it was awesome although they are very delicate once you do that.
Makes 8 small waffles
* I cheated & made mine with bisquick because I didn't have almond flour, skipped the coconut flakes, and used honey. Calories came out to 264 for 4 waffles.
