What are some ways to incorporate veggies into breakfast? I'm not really a fan of omeletes (not sure why, lol).
Are there any other ways?

I also want to know this.... I know that putting spinach and tomatoes and things in an omelet is an option...0

When you saute or grill veggies the night before have left overs on a English muffin with a sprinkle of cheddar or jack cheese?
Other then Raw or in an Omelet, I don't know what else to give you.0 -
I just ate leftover whole wheat veggie pizza for breakfast. Mmmm....0

Scrambled egg burrito with spinach, tomatoes, and jalapenos. And maybe some turkey sausage if I'm really hungry.0

any leftover veggies in eggs..0

Kale or raw baby spinach in a smoothie...YUM!! Toss a good cup in the blender and you won't even know it's there. Omelets are another way...salsa on your eggs, spinach & mush omelet etc. Carrot juice in a blender with a smoothie (or whole carrots for that matter depending on how smooth yours can blend).0

Throw something green into a breakfast smoothie. Blend it well first with a little liquid. Ex. Kale, spinach, etc. You will not taste it and will add a serving of a good veggie.0

We will put a lot of raw veggies in our morning smoothie. Spinach, Kale, Broccoli, Cucumber and Carrots along with some fruits like pineapple, mango, strawberries, blueberries, and the like along with some protein powder and ice all go into our blender and it is really yummy.0

I know that most people on here don't agree with juicing.. (or from what I have read most don't) but juicing vegetables could be another option. You do lose some benefits from juicing rather than eating whole, fiber for one. But it can't hurt. This morning i'm actually making a juice, green cabbage and carrot.0

I buy a few different colors of bell pepper and cut them into strips. I keep them in a ziplock baggy in the fridge (they will stay good for about a week.) I will chop up some into my eggs, some will go into a stir fry with ground chicken/turkey/beef, and some are eaten raw dipped in humus or salad dressing. I put spinach in my eggs, too.0

I fry egg whites inside a pepper ring.0

There is no law that says you have to eat certain foods for breakfast. Eat leftovers from lunch or dinner or cook something you like.0

Awesome suggestions guys!! Thank you!0

Ooo that sounds cool! I'm so gonna try that!0 -
I sometimes like red and green peppers, chopped into sticks, dipped into hummus. Mmm!0

My ultra favorite breakfast smoothie tastes like chocolate or berries but is packed with greens!
Recipe: 4 oz of soy milk,
3 - 6 oz of spinach, kale, red chard, bok choy or whatever greens you have on hand.
1 cup mixed frozen berries
1 banana
1 tbsp flax seed
3 - 6 tbsp of cocoa powder depending on how many greens you use (cocoa powder is optional if you don't like chocolate)
sweetener depending on how many greens/how much cocoa powder you use
blend it all up and add a cuple of ice cubes if you want it colder or freeze the fruit. Makes about 20 oz and under 400 calories.
If you like a citrus or pineapple taste: use 2 out of three fruits listed
1 orange
1 cup pineapple
2 kiwis
3 - 6 oz greens as listed above.
a slice or sprinkle of ginger
You won't need a sweetener for this one as the fruit is really sweet on it's own.
blend until smooth. add a few ice cubes if you want it more colder. Under 300 calories0 -
Other posters have mentioned green smoothies, which I love. I also like leftover roasted veggies cold for breakfast, or just raw veggies out of the fridge (hummus optional). Keep in mind that you can eat anything for breakfast, I'll eat leftover stir fry or something like that for breakfast. Veggie sandwiches are also good for breakfast.0

^^THIS. Getting beyond the idea of limited 'breakfast food' choices is really freeing. And leftovers are often a minute of microwaving away.0 -

I love this idea too. My kids might find this fun and yummy also!!0 -
I like juicing a citrus-based breakfast drink which includes celery, spinach and carrots, and if I want to eat something with that I love to saute mushrooms in coconut oil or eat garlic-stuffed green olives.0

I scramble egg whites with sauteed onions, mushrooms, and bell peppers with a wedge of LCC.

Eat dinner for breakfast, breakfast doesn't have to consist of what we tend to think of as breakfast foods. Scrambled tofu with loads of veggies. Veggie soup. Smoothies (rather than juicing so that you don't lose the fiber - but if you have a good juicer that doesn't leave behind a ton of stuff I think juicing is awesome). My favorite smoothie: banana, coconut milk, berries - fresh or frozen, sometimes mango, ground flaxseed, cinnamon, and lots of kale.0

Just eat veggies, any way you enjoy them.0

I've only ever had it once (took up way to much time in the morning for me to do often), but look up recipes for savoury oatmeal, you could get tons of veggies in there! it was really good actually becuase if you think about it, we are used to oats as something sweet only because we are so used to sweetening them with sugar/fruit etc. but it's a grain, like wheat or rice. don't tell me you only ever eat bread with a sweet spread!
oats are a blank canvas, get creative :flowerforyou:0 -
I love veg for breakfast. I love porridge for tea! Don't think about making veggies breakfast friendly, just eat 'em! I enjoy mountains of kale wilted in a little stock and then a spoonful of cream cheese stirred through for a VERY filling brekkie
And I've often chopped an entire punnet (250g) of button mushrooms, fried them in frylight and then just had those for breakfast nomnomnom East what you enjoy, at any time of day
Incidentaly, I'm not a huge chocolate fan, but think it's VERY nice if it's the first thing I eat after waking lol0 -
I don't like omlettes either, but I do like frittatas. Something about it being oven baked with the a bit of parmesan melted on top makes it taste better to me. My favorite is a fresh spinach and sweet onion frittata.
I used to eat deviled eggs and a side of fresh steamed green beans for breakfast all the time. Steamed asparagus seems like a good breakfast veggie too. Other breakfast veggies - Half a tomato with fresh mozzerella and basil on top broiled until the cheese is bubbly; cottage cheese with veggies; light cream cheese blended with lots of tiny chopped veggies like carrot, spinach, celery, onion, etc. spread on celery, crispbread, or a mini-bagel; peanut butter stuffed celery sticks0 -
Anything can be a breakfast veggie! If I'm honest I eat chicken salad for
Breakfast. I don't think that you need to stick what is traditionally seen as a breakfast item!
I try and get people to eat healthy options, no matter what time of day it is.0 -
I love using my broiler! I will take an english muffin and put tomato, spinach, or any other veggie I want and top it with a cheese and broil it for a min or so. You can also use a toaster oven. Tastes yummy! Also, I put pico de gallo in most of my egg scrambles.
Like others have said..there is no rule about what you eat for breakfast! Have fun with it!0 -
Boil some asparagus or long stem brocolli in a pan with some eggs, and dip the veg in the runny eggs. Yummy x0

When I make a breakfast sandwich (like today) I have whole wheat or grain bread or a wrap with egg, lettuce and/or spinach, peppers, tomatoe, cheese, etc. Also, I agree, breakfast doesn't have to consist of traditional breakfast choices. I also mix fruit with my yogurt to change things up a bit and I am big on smoothies - I love them and try different ones to see what I like best! If you enjoy salads why not make a salad for breakfast? I put everything in my salads and have had some great comments from those who don't even like salads - they have called them masterpieces. I include a variety of mixed greens, spinach, almonds, cheese (i.e. feta or cheddar), dried cranberries, walnuts, meat (turkey, chicken, etc), peppers, mushrooms, tomatoes, grapes, apples, broccoli, raisins, etc. Basically whatever is on hand I mix together for a wonderful blend of colours, texture, and taste. Then I'm not eating the same old salad every day and becoming bored with it. You can use a little dressing such as a vinegarette if you like. I've also had half a toasted bagel with apple slices on it and melted cheese on top of the apple. It is delicious. The options are endless and increasing fruits and veggies is very important so it is nice to incorporate them whenever you can. Good luck.0
