My husband bought me a Electric Pressure Cooker and I would like to use but looking for healthy recipes to make in it. Thanks..

I have a regular pressure cooker that I have used for over 20 years - I LOVE it!
We call this Chicken Casserole - not sure why!
4 servings
4 boneless skinless chicken breasts cut into chunks
1 onion, chopped
1 T olive oil
4 medium potatoes, scrubbed but not peeled, cut into quarters (I like yukon gold)
1 lb package carrots, scrubbed, tops and bottoms trimmed and cut into chunks
2 cups frozen green beans
1 Tablespoon paprika
1 Tablespoon dried garlic powder (or two-three cloves minced)
1/2 teaspoon each salt and pepper
1 cup chicken stock
Heat oil in cooker, add onions and saute until golden. Add chicken and cook just until golden. Mix spices together and sprinkle over chicken and onion. Stir to coat. Add potatoes and Carrots and stir to coat well. Pour chicken stock over top. Put on lid and bring to pressure. Cook for 8 minutes, remove from heat and release pressure. Add frozen green beans and stir to combine. Close lid and let heat thaw the green beans. IF there is a lot of liquid at the bottom, break up a few potato pieces and stir - the starch from the potatoes will thicken the liquid.0 -
Here's another favorite!
Goulash serves 4
1 pound sirloin steak, cut into chunks
1 onion, chopped
3 cloves garlic, chopped
1 Tablespoon olive oil
1 lb carrots, scrubbed, tops and bottoms trimmed, and cut into chunks
4 medium potatoes cut into quarters
1/2 cup ketchup
1/2 cup water
1/2 t salt
1 t pepper
Heat oil in cooker. Saute onion until golden, add garlic and stir for a minute. Add sirloin (don't crowd - it will steam rather than brown) and brown on all sides. Add carrots and potatoes. Add ketchup, water, salt and pepper. Stir well. Close lid and bring to pressure. Cook for 10 minutes and then remove from heat and release pressure.0 -
Pumpkin Soup
1 Tablespoon butter
2 big onions
garlic - a clove or two
pumpkin - about a kilo? Nice dark golden pumpkin flesh, no pale yellowy/green tinged stuff!
stock cube & water
can of evaporated low fat milk (or use cream if you don't care about calories)
pepper & salt to taste
Melt butter in pressure cooker, add onions & garlic, cook until softened but not coloured. Thrown in peeled chunks of pumpkin, add stock powder / cubes or real stock, and water to almost cover all the pumpkin. Bring to pressure, cook for 10 mins, let pressure off. Liquidise (be careful if it is still hot) stir in a can of reduced fat evaporated milk.
Lots of people add other vegies / spices etc but I love the unadulterated pumpkin :-) And butter just gives it that lovely taste.0 -
Beef stew recipe. (Note: this is for 15 psi)
Take 2 cups of water, and cook stew meat for 30 minutes with rack.
While meat is cooking you need to do a little prep work.
Peel, and cut the ends off the carrots. Cut into 1/3's.
Cut onion in 1/2, then 1/4.
Open you're two cans of tomatoes. (this is the sodium)
Wash a pound of white button mushrooms.
Peel husk from corn, snap in 1/2.
Wash baby red potatoes.
Add all the other ingredients, and cook for 5 minutes.
Let rest for a couple of minutes, open up and enjoy!
