Cupcakes/Muffins

I made some delicous zucchini muffins a few weeks ago and put them in the freezer for snacks - but I've finished them all, so I need to make another batch!
1 medium zucchini, grated
1 medium carrot, grated
Grated cheese, 100g
2 eggs
3/4 cup skim milk
1 tbsn olive oil
1 cup rolled oats
1 cup wholemeal flour
1/2 cup white self raising flour
1/2 tsp salt
1 tsp baking powder
Mix the grated veggies, cheese, eggs, oil, milk until combined.
Stir in the dry ingredients until just mixed.
Place into muffin cases and bake at 180c until golden and cooked through.
These are fairly heavy and don't rise a lot but they are really tasty and filling.
With my ingredients they made 17 muffins at 95 cals each.0 -
And another one if you don't mind using a box of cake mix... not so healthy as the zucchini muffins, but a nice sweet treat, inspired by a recipe from MFP.
Pineapple carrot cupcakes
1 pack butter cake mix
1 tin crushed pineapple (not drained)
1 carrot grated
Mix everything together and bake in cupcake pans.
I can't find my recipe now, but I think they came out about 100 cals each.
It will really vary depending on your choice of cake mix and pineapple - and how big you make them!0 -
Thanks, they sound really nice! Ill give them a go this weekend xx0
