Mediterranean Tilapia

I make this now and again for myself and my wife and it is fantastic. Low in calories but HUGE in flavor. It's simple to whip together as well. I like tilapia but you can use any white fish you like.

One serving:

Ingredients:
- One filet of tilapia (we average about 5-6oz each)
- One lemon (for slices and juice) - you'll only use 1/2 for one serving
- 1 TBSP unsalted butter, cut into 1/2 pieces
- 1/4 cup grape tomatoes, cut in halves
- 3-4 kalamata olives, sliced
- 2-3 marinated artichoke hearts, sliced up
- either a little splash of white wine or some of the artichoke marinade
- 2 TBSP fresh parsley, chopped
- 1/2 tsp dried thyme
- salt and pepper
- a piece of foil paper to wrap it all up!

Let's get it on!

Preheat your oven to 375 degrees and set to use the middle rack.

Lay the foil paper down on a baking sheet. Salt and pepper both sides of your fish and lay it down on the foil. Stack the ingredients up on the fish:

Butter, a couple lemon slices, a squeeze of the lemon juice, sliced grape tomatoes, sliced olives, sliced artichokes, chopped parsley, thyme, and the liquid (either the wine or marinade - not TOO much, just a little).

Make a foil boat around the ingredients and seal it up. Pop it in the oven for 20 minutes. That's it.

When I serve this, I open the foil after it comes out and put the whole thing on a plate. That keeps all the juice inside and has a neat little gimmicky feel to it. We eat it right out of the foil.

I serve this with either a salad, some steamed asparagus, or even a baked potato. Any way you lay this out will be a hit. It's super tasty. For additional servings, just double, etc the ingredients since they're individually contained. Prepare each individual portion in its own little foil boat.
