Looking for new but easy ideas for my family. Tonight we're having skinless, boneless breaded roasted chicken, garlic asperagus, squash and rice. What are you having?

Meatloaf muffins with mashed potatoes and green beans

Tweaked the recipe a bit - instead of carrots, I add finely diced mushrooms (4 oz) and green pepper (1/2). So good!

I play in a dart league on Monday's so tonight will something quick and easy. Probably be a wrap made with leftover salmon, cucumbers, kale and a homemade mustard vinegrette.

Glad you just mentioned the freezer... I need to get the beef I need for tonight's dinner out of the freezer.

    We are having "pasta" bolognese

    1 lb grassfed beef
    1/2 cup onions
1/2 cup finely (food processor) chopped carrots
    3 tbs chopped garlic
    1 can tomato paste
    I can diced tomatoes
    basil, other italian seasoning
    a little water
    1/2 cup red wine

    simmer all together.

I will freeze half of that for later use... maybe zuchinni lasagna.

We are eating it over shirataki noodles... my first time trying them.

Mixed green, tomato, cucumber, onion, sweet pepper and banana pepper salad with some spray balsalmic salad dressing.
