Quick & Easy Mexi-Chicken!

Decided this weekend I was in the mood for Mexican food, but no one else was. So I threw this together for myself and it's lasted a few days (with other family members needing to try it LOL)....

1 lb Ground Chicken - Browned (I used Gold'n Plump 93/7 Frozen)
1 normal size can Black Beans (I used No Salt Added Bush's and drained/rinsed them)
1 - 8oz. can Tomato Sauce (I used No Salt Added Hunt's)
Taco Seasoning - all to taste? (I used home made from here: http://www.5dollardinners.com/homemade-taco-seasoning )

Total (4 servings) / Per Serving (1/4 of recipe)
Calories - 866 / 217
Carbs - 60 / 15
Fat - 33 / 8
Protein - 86 / 22
Fiber - 15 / 4
Sodium - 844 / 211

Mix all above until hot. Use to fill tortillas as tacos, enchiladas, quesadillas, etc....or just serve it over rice! Add your favorite toppings and it's pretty delicious!

First night I served it over rice, topped with sour cream and crumbled some tortilla chips over it. Second night, hubby & I had some corn tortilla tacos with it. Today, I finished it up making mexican pizzas with corn tortillas. I will DEFINITELY be making this again!
