I made this last weekend...
Grilled turkey burgers mixed with diced jalapeno. Topped with blue cheese crumbles and thick slices of avocado and tomato. It was amazingly good for how simple it was to make.0 -
I have this good avocado and cucumber soup recipe from Gordon Ramsey. I can email it to you later if you want. I think it has 2 cucumbers (peeled), 2 avocados, Greek yogurt, lemon juice and Worcestershire sauce. I would have to get back to you on the specifics.0

Try this recipe I found online. I loved it!
Tomato and Avocado-Goat Cheese Crostini
1 loaf baguette bread
2 teaspoons garlic, minced
1/3 cup olive oil
2 ripe avocados, peeled and seeded
4 ounces mild goat cheese
1/4 teaspoon coarse salt
Freshly squeezed lemon juice
1 1/2 cups Roma tomatoes, seeded, diced 1/4-inch
2 tablespoons extra-virgin olive oil
1/2 teaspoon coarse salt
1/4 teaspoon ground black pepper
1/4 cup fresh basil leaves, chopped
Small basil leaves for garnish
Preparation:
Preheat oven to 350 degrees F.
Slice bread into 1/4-inch thick diagonal slices. If you're working with a large loaf, you'll then want to halve each slice again.
In small bowl, combine garlic and olive oil. Brush bread slices lightly with garlic oil mixture. Arrange on sheet pans in a single layer. Bake crostini approximately 10 to 15 minutes until golden brown and crisp. Remove from oven and let cool. NOTE: These can be made ahead of time and stored in an airtight container. Be sure to let cool completely before storing.
In medium-sized bowl combine avocados, goat cheese, and 1/4 teaspoon coarse salt. Mix until smooth. NOTE: Add a little fresh lemon juice to prevent the avocado from browning.
In separate bowl, combine tomatoes, olive oil, 1/2 teaspoon coarse salt, pepper, and basil.
To serve, spread each crostini with approximately 1 tablespoon of avocado mixture, then top with tomato-basil mixture. Garnish with small basil leaves if desired. Place on a large serving plate.
Try not to top too far ahead of serving, as the bread can get soggy.0 -

I love avocado sliced on sandwiches of all sorts and on salads of all sorts. I've heard people say everything tastes better with bacon on it, I'm that way about avocado.0

Avacodo Fries
Ingredients ( Edit ) Canola oil for frying
1/4 C flour
1/4 tsp Kosher salt
2 large eggs, beaten
1 1/4 C Panko (Japanese bread crumbs)
2 firm, ripe medium avacados, pitted, peeled and sliced into 1/2-in wedges
Instructions ( Edit ) 1. Preheat oven to 200â. In a medium saucepan, heat 1 1/2 in. oil until it registers 375â on a deep-fry thermometer.
2. Meanwhile, mix flour with 1/4 tsp. salt in a shallow plate. Put eggs and panko in separate shallow plates. Dip avocado in flour, shaking off excess. Dip in egg, then panko to coat. Set on 2 plates in a single layer.
3. Fry a quarter of avocado slices at a time until deep golden, 30 to 60 seconds. Transfer slices to a plate lined with paper towels. Keep warm in oven while cooking remaining avocados. Sprinkle with salt to taste.0
