Lettuce Wrap Enchilada

Lettuce Wrap Enchiladas
Serves: 2 Calories: 290 calories per serving
INGREDIENTS
1 Nonstick cooking spray
2 bell peppers, cut into 1/4-inch strips
2 tablespoons water
1/2 tablespoon chili powder
1 cup shredded or cubed cooked chicken
1/2 cup fresh cilantro, chopped
4 leaves romaine lettuce
1/2 cup canned fat-free reduced-sodium refried beans, warmed
1/2 cup salsa
1/2 cup shredded reduced-fat Cheddar cheese, (2 ounces)
1/4 cup fat-free sour cream
PREPARATION
1. Spray large skillet with cooking spray; heat over medium-high heat. Add bell peppers, water and chili powder; cook 4 to 5 minutes or until water evaporates, stirring occasionally. Reduce heat to low. Add chicken; heat until warm. Stir in cilantro.
2. Fill each lettuce leaf with one fourth of beans and one fourth of chicken mixture. Top with salsa, cheese and sour cream.
