North African Couscous w/ Chickpeas

I've been looking for a good couscous recipe and I found one. Just tried this for dinner, very good. I might add chicken next time. And its so easy, only takes about 15 min.

Servings: 4 (1 cup each)

Ingredients

1 1/4 C. Water
1 TBS Olive Oil
1 tsp Ground Cumin
1/2 tsp Ground Coriander
1/4 tsp Ground Cinnamon
3/4 tsp Salt
1/4 tsp Coarsely Ground Black Pepper
1 Cup Quick Cooking Couscous
1 (15oz) Can Chickpeas, rinsed and drained
2 tsp Grated Lemon Zest

Directions

Combine the water, oil, cumin, coriander, cinnamon, salt, and pepper in a saucepan. Bring to boil, remove from the heat, and stir in the couscous. Cover and let stand 5 min. Stir in the chickpeas and lemon zest, let stand 2 minutes longer. Fluff with a fork before serving.
