    My favorite morning snack (since I don't usually eat veggies for lunch) is; take a bulb of fresh fennel and slice thin. Put either Newman's Low Fat Sesame Ginger Dressing or 1/2 tsp sesame oil and 1 tsp of sweet Mirin on it and mix. It is so refreshing and yummy! Fennel is also known as sweet anise in some areas.

    I am also in Washington, the state and get my fennel at Safeway.

    Thanks. I currently eat peas/beans, potatoes, turnips, asparagus, apples, oranges, grapes, and strawberries. I will def try out the couscous, quinoa, and ezekiel bread. I appreciate the ideas on trying different ways to cook veggies. LoraF83 that sounds like a great way to cook green beans. I will add them to my shopping list!!!

    I have recently become a huge fan of kale. One of my favorite ways to eat it, is to make kale chips. You just chop up some washed Kale into chip size pieces, toss in olive oil and salt, spread them across a baking sheet, and bake at 350 F for 15-20 minutes. Delicious. I also like swiss chard sauteed or boiled with the stems chopped up with it, tossed in vinegar. Parsnip fries are neat idea for new vegetables.     Try looking at the Ottolenghi website for vegetable foods that are more than tasty. He's known as the Green Gourmet here in the Uk and writes a column in the weekend Guardian which is widely read.

    Try green smoothies! One of my faves is banana, apple, orange and spinach. YUM!

    Yes!!! love the smoothies....i hate veggies, but get them in my doing smoothies....same with my kids...they say "i don't like to eat veggies, but i will drink them"....spinach is the easiest to mask taste...i use 2 cup spinach, 1 cup strawberries, 1/2 yogurt...maybe add a banana....I also experiment using frozen peas, cooked carrots, cucumbers....just experiment!!! bananas and vanilla mask most everything!!!

    That's a good idea to mix spinach into the smoothies. That would be great to get some iron in my diet too. I think I may try you recipe this week after I hit the store!

    Those are some great ideas! Thanks. We tried kale in our juice and weren't huge fans but this sounds like a great way to get use to the taste of kale. Thanks for the website for the parsnip.

    Wow what an awesome thread! So many great ideas. Roasting the veggies is such a great way to cook them and add a dash of healthy olive oil in the mix. I am very blessed that my 5 year old twin grandsons absolutely LOVE veggies and fruit. They chose grapes over a cookie the other night. We roast brussel sprouts (way different taste than gross canned stuff), broccoli, asparagus, white and sweet potatoes, carrots, parsnips and are willing to try more.

    Spaghetti squash is great served as, go figure, spaghetti. I actually prefer it to pasta. We put spinach in our meatballs and meatloaf.

    One thing to make it fun is to try the "Alphabet method". Start with the letter "A" and pick out a new veggie or fruit you haven't tried. Buy a bundle of asparagus and try a little of it roasted, a few steamed, a few sauted and a few raw. Even at $3.00 a pound it's a cheap way to find out if you like it and in what way you make like it.

    If you have a local food coop that stocks bulk spices and herbs, go in and buy about a Tablespoon of ones you would like to try. It's pennies and you might find some you really like.

    I find it is much easier to change my eating lifestyle if it is not boring. Experiment! It's still going to be cheaper than a drive thru!

    CaloriaHernan thanks for the idea on sweet potato pancakes. I love pancakes but a huge fan of sweet potatoes but eating them as a pancake will probably change that!

    Jameiesadler - I love fresh game. Haven't had any in awhile tho. Not to sure where to buy it in WA and I don't hunt here/know any hunters. I will look into finding it again tho.

    Deliah47 - thanks for the fennel idea and where to find it. I will give it a go and there is a safeway near by!

    i make a big pot of soup almost every week. tomato sauce, beef broth, green beens, lima beens, great northern beans, corn, green pees, onions, potatoes, celery, okra, a can or two of rotel and with either lean ground beef or ground turkey. salt and pepper. i dont know if its all peppers that you are alergic to or just black pepper. you can use fresh veggies or if you want to make it easy, canned veggies are fine. with soup almost any vegitable tastes better you can put change the veggies to anything you like. it takes about 30 minutes to make and it last me almost a week. i dont get tired of it because its so good.

    I eat hay. lol jk just some humor, I try to stick to as fresh n raw as possible with fruits n veggies. N I try to stay with lean meats. I do cheat sometimes, but I try to find more healthier foods to snack on as a treat instead of the same ol same ol, cus I am human n I crave a variety.

    Breakfast smoothies are where I have been getting a ton of vegetables. I have also recently discovered a new appreciation for Cauliflower-bust it up into florets toss it in a bag with touch of salt and some Olive oil and roast it for 25 min or so at 450 degrees.

    As for the allergic to pepper thing, What type of pepper are you allergic to?

    Spra428: thanks for the soup idea. I made some beef stew for my husband but spiced it up so I didn't eat any. Thats a good idea to mask the veggies in a good stew tho. Thanks for the thought.

    tlc12078! I appreciate the humor. I am trying to add fresh veggies but having a hard time. I don't always like the taste. I need to work on eating them for 2 weeks so I can get use to the flavor but rarely make it that long.

    LordBezoar: I am allergic to all pepper in spice form - black, red, Cayenne, etc. I like the cauliflower roasted idea. I will try that one out.
