This dish is easy as anything and super healthy. Whenever I get to stay home, I made it for my sweetie and me.
Open a jar of salsa.
Open a can of black beans.
Cook a scrambled egg with a little cheese, or a fried egg with no cheese (runny yolk, of course).
Microwave a 1/4-1/2 cup black beans in a bowl.
Top with egg.
Top that with salsa.
Sprinkle with cilantro, if you have some.
Smoke 'em if you got 'em!

I made this for breakfast this morning (1 whole egg version with the yolk EXTRA runny) and topped it with 1 slice of crumbled turkey bacon and.... OMG it was amazing! Thanks so much for sharing!0

Good to hear! I always gotta recommend sprinkling some cilantro on top. Hey, I bet it'd be good with some soyrizo on there (you know, the soy version of chorizo). I liked hearing how you made the recipe your own.0

I ate some this morning with a mild alteration. I mixed in another yogurt sauce (see http://www.myfitnesspal.com/topics/show/541840-tzatziki-say-it-three-times-fast for another yogurt sauce example) with a south of the border twist. Dice chipotle peppers and stir in with nonfat plain yogurt. This sauce, I stirred into the black beans for an extra creamy, spicy kick. Holy cow, it was good. BUMPSKI!0
