This dish is easy as anything and super healthy. Whenever I get to stay home, I made it for my sweetie and me.

Open a jar of salsa.

Open a can of black beans.

Cook a scrambled egg with a little cheese, or a fried egg with no cheese (runny yolk, of course).

Microwave a 1/4-1/2 cup black beans in a bowl.

Top with egg.

Top that with salsa.

Sprinkle with cilantro, if you have some.

Smoke 'em if you got 'em!

This bfast is delish, and sticks to your ribs for HOURS after eating it. Cha-ching!

I had this for breakfast this morning. Minus the black beans, but will definitely have to try it with the beans next time. Yummy.

I think when someone likes a thing and wants it to stay high up in the list of topics (as opposed to being lost at the bottom), they post a bump reply to keep it fresh.

I made this for breakfast this morning (1 whole egg version with the yolk EXTRA runny) and topped it with 1 slice of crumbled turkey bacon and.... OMG it was amazing! Thanks so much for sharing!

Good to hear! I always gotta recommend sprinkling some cilantro on top. Hey, I bet it'd be good with some soyrizo on there (you know, the soy version of chorizo). I liked hearing how you made the recipe your own.

Thanks for the tip! I've never come across soyrizo, but I'll be looking out for it on my next shopping trip

I ate some this morning with a mild alteration. I mixed in another yogurt sauce (see http://www.myfitnesspal.com/topics/show/541840-tzatziki-say-it-three-times-fast for another yogurt sauce example) with a south of the border twist. Dice chipotle peppers and stir in with nonfat plain yogurt. This sauce, I stirred into the black beans for an extra creamy, spicy kick. Holy cow, it was good. BUMPSKI!
