question about oil in cooking

Hi guys, I used 5T (along with red wine vinegar, garlic, and lemon juice) to marinade 5 thinly sliced chicken breasts. I dumped the whole marinade in a pyrex casserole dish and cooked it. There was a ton of liquid leftover that was oily. So, I figure 1T per breast but would you count the whole Tablespoon?
thanks,
Karen
