coconut flour biscuits

Finally, success with baking something that tastes good and is not too unhealthy! I made coconut flour choc chip biscuits. They are gluten free and can be dairy free if you use soy or almond milk etc. If you make 10 from the batter they are 100 calories each with 7g carbs, 3g sugar, 6g fat, 3g protein and 3g fibre. They are not super sweet, most of the sweetness comes from the chocolate but they still taste like a treat to me. Next time I would add some cinnamon.

Ingredients:

1/2 cup coconut flour
1/4 cup buckwheat flour
1.5 tbsp finely ground chia seeds (or you can use 3 tbsp ground flax seeds)
1.1 cups low fat milk (you might need a bit more/less for the right consistency depending on your flour)
2 tbsp melted coconut oil (i would like to experiment with reducing this for less fat)
1 tbsp cashew butter (you could use any nut butter)
1 tbsp vanilla/almond extract (I used 3 tsp vanilla and 1 of almond)
40g dark (70%) chocolate, chopped into small pieces
12g stevia (the powder/crystal form)

Directions:
Mix the ground chia seeds with 1/4 cup of the milk and leave for 10 mins to form a gel
Sift the flours and mix with the stevia and chocolate
Add the rest of the ingredients and the chia 'gel'
Place on baking tray as 10 biscuits, spread thinly
Bake at 200 degrees C for 30 mins or until golden brown
