    Thanks so much for the ideas and recipes, brilliant, can't wait to try some of them, especially the baked sweet potato fries and the baked sweet potato skins, filled. I can be so lazy at times with cooking that I end just having boiled veg, rice noodles and fish and it is getting really boring, lol, so these replies are great.

    I'm the only one in my family who likes sweet potato, I have them as fries. I plan on cutting them in half and grilling them come summer.

    Great ideas. Not sure if this was already mentioned but just like regular potatoes, leave the skin on if possible.... very good for you too!

    I either slice mine french fry style or in thin slices, spray with a little olive oil spray and sprinkle with cumin and bake. BUT tonight I had half of a baked sweet potato with good ole fashioned butter, cinnamon and brown sugar and boy it was good! Not something I do very often. :)

    I wrap mine in foil and grill them. I leave them on the grill for about 45 minutes. They are sweet and delicious when they come off the grill. When I cut it open, I put ICBINB and a sprinkle of nutmeg. Yum!!

    Bake, cut in half and eat with a spoon.. its yummy. don't even need all the stuff you put on regular potatoes. Also try sweet potato fries (homemade) its pretty good.

    sub corn tortillas (check the label, many are low cal) or whole wheat tortillas. Some tortillas are high in calories so just watch it! :)
