    How about a big mixed green salad with grilled chicken on the side, everybody can add to salad as much chicken as they like?

    I made something last week that BLEW MY MIND. Prawns sauteed in a little butter with Frank's Red Hot on them, served in lettuce wraps with avocado. Oh. ma. gawd.

    bok choy lettuce wraps.. saute bok choy and some onion until soft. add ground turkey and cook until no longer pink. Add your favorite seasioning (you can use taco but i avoid it because of the sodium) and serve with romaine or bibb lettuce and the taco shells. Top with your favorite taco toppings :) Sooo good and healthy

    I love turkey meatloaf with steamed veggies and a baked yam (sweet potato)

    Meatloaf Recipe

    1 1/2 lb Lean ground turkey breast
    1/2 cups plain breadcrumbs
    1 medium onion, diced
    1 red pepper chopped
    2 cloves garlic
    1 egg
    1 tbsp Worcestershire Sauce
    4 tbsp tomato ketchup

    mix togeather and cook for 40 minutes at 350f

    **you may want to add 1 tbsp olive oil because it may be a little dry for your liking... I like it a little dryer**

    Meatloaf info: (without olive oil) 6 servings
    Calories 231.1, Total Fat 8.9 g (Saturated Fat 2.8 g, Polyunsaturated Fat 0.2 g, Monounsaturated Fat 0.3 g), Cholesterol 110.8 mg, Sodium 206.1 mg, Potassium 101.5 mg, Total Carbohydrate 9.2 g, Dietary Fiber 2.3 g, Sugars 3.2 g, Protein 27.9 g

    HOPE YOU TRY IT, IT IS VERY GOOD... you can also make burgers out of this!

    Last week I just used some of what I had on hand and it ended up being a big hit with my family.
    I used an Old El Paso taco dinner kit, but used canned chicken in place of the beef, and used black beans as a filler as well. As a side, white rice with salsa mixed in. Not only was it good but it was cheap and quick.
