Mock apple crisp SOOOOO good!!

Fool your friends and family. . .tastes just like apple!
I know it may be a little premature with summer veggies still a ways away but here is a great use for zucchini that I thought I would share.
1 Large zucchini
½ C brown sugar (or can substitute ½ C Splenda with 1/8C sugar free maple sugar)
1 tbl lemon juice
1 ½ tsp apple pie spice
Pinch of salt
1 ½ Tbl Flour
1.Peel the zucchini. Cut into quarters lengthwise, then remove seeds and cut crosswise (as you would cut apples for apple pie). Toss together chopped zucchini, lemon juice and salt. Place mixture into frying pan and cook until tender-crisp.
2.In a separate bowl, mix together the brown sugar, apple pie spice, and flour. Add the cooked zucchini to sugar mixture and mix well. It will be a little runny, but that's OK.
3.Place filling into small ramekins or a small baking dish and top with your choice. . .sliced almonds, low fat granola, muesli, or oats. Bake in oven at 400 degrees F (205 degrees C) for 35 minutes or until golden brown.
As a note, I like to add a little more cinnamon then is what is in the apple pie spice. This is so good served warm with FF frozen yogurt on top.

Yeah its great. Had so much zucchini from the garden last year I could probably make it into anything lol.0
