Meeting Caloric Requirement

Today, I still need to consume 320 calories, 59 carbs, 2 Fat and 8 Protein to meet my intake goal for today. How can I go about finding some food that will come close to satisfying these numbers. And is it okay to not use up the carbs/fat or protein every day, as long as I meet the caloric intake for the day ??????? Not quite sure what to do. The more I do it the better I'll get at planning out my calories for the day but right now I'm stuck with how to meet the requirement. HELP !!! :)
