Having trouble eating my calories

I'm a big girl I have a high calorie count from the site (2300 ish), The problem is days that I work my schedule is so weird I generally end up eating two meals and a few snacks so I don't make my calories unless I eat stuff that ain't exactly healthy. I wake up in the morning and eat cereal or eggs if I have time, a protein bar of some sort if I don't. I work usually until 4, I can grab something while working sometimes but not much. I eat lunch at 4 then go home. Then I'm not hungry again until it's time for bed and I just go to bed.
When I workout after work I'm famished and eat dinner at a reasonable time.

Add more calorie dense foods into your diet. Nuts and nut butters are a great way to go. Also, get up earlier and eat a decent breakfast. Plan ahead by cooking large batches of food on one day, then portion them out so they're grab and go.
Eating your calories isn't hard, but it when you're not used to doing it, it takes some getting used to.0 -
Here are the things that I love most that are calorie-dense and also good for you:
hummus - I MUST dish it out because I could easily eat 5 tbs at a sitting, especially Sabra which is my favorite brand.
trail mix/ fruit and nut mix/nuts - I love nuts and trader joe omega mixes. There are even some with a small amount of "m&m" type canides which are great treat and mostly healthy.
Avocado - great fats and so yummy. I like it plain, or in a salad, or mashed up with lime/cilantro/chopped tomato as a guacamole.
lentils and other beans.
I bring all sorts of things to work and can manage to eat even when I'm ultra-busy. Everything is prepared and just needs to be heated for a minute, or else I bring cold things. I keep bread in the freezer and a jar of pb jin my desk just in case I forget my lunch or need more food.
For awhile I was making a big egg fritatta type dish on Sunday and just heating it for 30 seconds in the morning. It had eggs, egg whites, and various veggies, bit of cheese. I would alternate that with premade steel cut oats. Literally takes 1 minute to prepare breakfast.0 -

This exactly. Pre prepping food is the best way to always have stuff ready. I buy a lot of prepackaged single serving items. Its a bit more expensive but totally worth it to me. I love the marketfresh salads they sell at walmart and I buy 5 a week to bring to work for lunch. I also buy fruits that I can clean and just throw into my lunch bag.0 -

I know this sounds weird, but:
-banana and peanut whole wheat sandwich - take one slice of bread, cut up some bananas on top of it, sprinkle roasted (unsalted or light salt) peanuts on top, fold over and consume. Taste similar to a peanut butter sandwich in texture and flavor or if you don't like bananas, avocados if you want. However, the bananas will also help raise your daily potassium intake. This sandwich should net you around 200+ calories.
-when I must eat out, I grab a Taco Bell Fresco Chicken Soft Taco or 2 or 3 of them depending on how long before I can eat again - they're 150 calories each, after 3 I'm good to go for a long time. They're healthy and functional.0 -

I can't bring stuff to snack on at work. I work fast food and don't get a break. I can snack on our healthier options if I have a spare moment (fruit cup, grilled chicken nuggets, apple sauce, apple juice) but I can't go eat.

I can't stand the shakes but I like making waffles with protein powder in the mix. Make chocolate waffles that are good for me.0

Check your state's labor laws - some states guarantee breaks to workers, if they do and your employer is not providing it then they may be subject to legal action.0

My state doesn't require breaks for shifts under 10 hours. My COMPANY doesn't require breaks for shifts under six hours. Mostly that means I work 4-5.75 hours per day. I'm not being mistreated by not getting breaks, just getting the raw end of the deal when someone else plays politics to become schedule manager. Labor costs are lower because people aren't working as long and they keep getting new hires (with minimum wage) working the longer shifts.0

Are you kidding?? That is crazy and totally not healthy. Where I live, labor laws state, a 15 minute break for 4 hours-5.75 and at 6 hours, a 30 minute break is given.
