Spicy Lentil Coconut Soup

Had lentils one day and didn't know what to do so I did a quick internet search and found this recipe. Made the soup and wow, so tasty! And turns out low in calories too. Just made it again last night... mmm!!

I used margarine instead of butter and I didn't add cinnamon or salt, apart from that, pretty much the same. I put all the ingredients into MFP to get my own #s and it came out to 184 calories for 1 cup (makes 8 cups). I had 2 cups for dinner (368cal) and 1.5 for lunch (276cal). Only thing I would suggest is careful with the chicken stock for the sodium content; Next time I make this, I'll find a lower sodium option. Love this soup!

  • This recipe sounds awesome. I love coconut and curry. Never thought to use with lentils. I like the high protien and fiber lentils have with lower claories. I have another lentil soup recipe that is only 150 calories that I eat often. It will be nice to change things up. Thanks for this recipe!

    Congrats on discovering this delicious soup! I've made it before and loved it too. I use vegetable broth which works well with it and has little salt. I sometimes make it very thick and eat it with brown rice and it's very satisfying. :smile:
