I just posted this recipe on my blog for homemade bread that you can make in the microwave! It makes one serving (two slices) and it has awesome nutritional stats! Please check it out and comment if you try it or have any ideas on how YOU would top it... :smile:

I personally love making things in the microwave because it cuts down on the waiting time, and I am not a patient person, especially when it comes to something sugary, delicious, and BAKED.

Enter this tasty, quick bread that you can make in the microwave. Including preparation and cooking time, you can have this bread ready to eat, slathered with your favorite nut butter in less than 5 minutes!

    Why does it need coconut flour? What is the purpose of this?
    I will try and find it if needed, but Have never heard of it.

    I use coconut flour because it is high in fiber, and it is much denser than regular flour, so it absorbs more liquid.

    Since this is a single-serving recipe, I would try just replacing it with all purpose flour, oat flour or almond flour. If the bread is too moist, try cooking it longer, or double the amount used to replace the coconut flour from 2 tsps to 4 tsps.

    If you can, try to buy coconut flour! It is a little pricey, but because it is so dense, a little goes a long way!

    I hope my suggestions help, but they are all just plain guesses on my part. It took some experimenting to begin with, and you'll have to adjust the recipe to make it just right for you :smile: Good luck and let me know what ends up working for you!!
