Chocolate Cheesecake Cupcakes.

This recipe is from a book I have called "Cook Yourself Thin Faster" and it's actually really delishhh.

makes 12 mini cupcakes.

Ingredients:

1/2 cup unsweetened cocoa powder
1/4 c of all purpose flour
1/4 tsp baking powder
1/2 cup granulated sugar
3tbs vegetable oil
1 large egg white
1 tsp vanilla extract
2 tbs chocolate chips
1/2 cup whipped low-fat cream cheese
1 tbs confectioners' sugar. ( I needed a little more, about 3 tbs to get it to where I wanted.) BTW- for those who don't know, it's Powdered sugar. :)

Directions:
Preheat oven - 350 degrees.

Whisk together the cocoa powder, flour, baking powder and salt in small bowl until well combined. In a large bowl, whisk together the granulated sugar, oil, egg white and vanilla until well blended. Add the cocoa powder mixture to the sugar mixture and stir until combined. Stir in the chocolate chips.

Divide the batter among the baking cups, bake until a toothpick inserted into the center comes out slightly wet (for me, that's maybe 15 minutes, give or take a minute. It varies, be aware!) cool the pan on a wire rack until completely cooled.

Meanwhile, beat the cream cheese and confectioners(powdered) sugar together in a small bowl until smooth and fluffy, when ready to serve, top each cupcake with a dollop of cream cheese.
