choc muffins - under 150 cals!

i know it sounds cray, but these chocolate muffins are AMAZING, you can hardly taste the beetroot bt it does lend a nice sweetness. batter makes about 20 regular size muffins and they're about 147 cals each.

ingredients:
375g fresh raw beetroot bulbs, peeled and grated
265g (1 3/4 cups) self-raising flour
1 tsp mixed spice
200g (1 cup, firmly packed) dark brown sugar
3 eggs
180g lite margarine, melted
150g dark chocolate, melted

put all ingredients in a big bowl and stir to combine. pour into patty pans/muffin tins and bake in a 180 degree oven for 20-25 mins or until a skewer comes out clean.

so easy and so so low cal, good for a healthy chocolate hit!

please try, you wouldn't know they're full of beets!

    they just beef up the mixture and since they're low in calories, it makes for much healthier muffins. they also add texture, substance and a great earthy sweet flavour.

    I tried these and substituted 100g of the margarine for a mixture of pureed courgette (zuchini) and canellini beans. They came out quite heavy and gooey - not sure if that would have happened anyway - but very tasty!
