Scrambled Egg and Pepperoni Bake

Last night before bed I was craving pepperoni with eggs somehow for the morning. Looked up simple recipes and found one that I tweaked a little.
I used 1/2 cup shredded part skim moz, half cup cheddar jack, and 15 slices of Hormel pepperoni diced. Sprinkle cheese and pepperoni in bottom of square baking dish. I think mine is 8x8. I sprayed bottom with cooking spray. In bowl mix 5 eggs with 3/4 cup skim milk, add 3/4 t dried basil and a sprinkle of oregano and pour on top. Bake for 25 min or so on 400. Use knife to test if it's done.

I have this cooking right now and it smells like I'm cooking a homemade pizza. I'm hungry so am only dividing it by 4 (will save rest for breakfasts or lunch this week). As 4 servings, the recipe builder said it was 258 calories per slice. If you used turkey pepperoni (17 slices) it's 240 per slice. You could use less cheese too and make it lighter. Or egg whites!

    I just had my big slice and it was delicious and filling. You're right, pizza for breakfast!
