Oven-Fried Chicken with Cinnamon Spice
This is delicious. I got it from "Cook Yourself Thin Faster" but I had to cook it longer than suggested time. After they suggested, I had to cut slits in the chicken and put it in for 15-20 extra minutes.

1c Whole Wheat or Dried Bread Crumbs ( I actually used Corn flakes from kellogs and smashed them up for bread crumbs.)
1 tsp Onion Powder
1 tsp garlic powder
1 tsp cinnamon ( i added 2tsp+1/2 tsp)
1 tsp salt
1/2 tsp ground pepper
1 tbs canola oil
1/2 all purpose flour
1 large egg,lightly beaten.
4 boneless, skinless chicken breast
Preheat Oven - 450 degrees. Line a large rimmed baking sheet with aluminum foil
Combine bread crumbs, onion powder, garlic powder, cinnamon, 1/4 tsp salt, 1/4 pepper and canola oil in a shallow dish. Place flour in another shallow dish. Place egg in another shallow dish.
Season the chicken with remaining salt and pepper. Coat chicken breast in the flour, shaking off excess. Then dip into egg, and dredge in the crumb mixture. Place chicken in prepared pan. Repeat with remaining chicken breast halves.
Bake until chicken is golden brown and cooked through. About 20 minutes. (CHECK FIRST, I needed to do it longer like I said above.
