Cooking with nettles/nettle recipes?

We've got a patch of nettles in the garden that hubby's determined to get rid of this weekend. Well I was thinking, can't we just eat them?

Anyone got any good nettle recipes? and advice on how to pick and prepare them without being stung?

ive just searched the net and found some recipes, but dont know if id eat them from the garden, next doors cat might of wee'd on them

That sounds pretty nice! I would suggest you wash them very thoroughly if getting them from your garden. For prepping the food, I think if you wear a pair of rubber gloves while handling them then you should be fine
