seasonal greens

OK gang,

I am going for my first pickup at the local CSA farm here in NE. Will have all kinds of greens including bok choy, collards, kale, and chinese cabbage.

Anybody got any good recipes for any of these?

    I like to wilt greens in a little vegetable broth, and toss in warm cheese tortellini and a sweet onion dressing (I use Ken's healthy choices)... it would be really good with a little bit of crispy bacon too!

    Lemon Pork Stir-Fry
    180 Calories

    INGREDIENTS
    • 1 Tbsp cornstarch
    • 1 12-oz pork tenderloin , halved lengthwise, cut crosswise in 1/4-in.-thick slices
    • 2 tsp oil
    • 12 oz baby bok choy, quartered crosswise
    • 1 bell pepper, cut into strips
    • 1 cup shredded carrots
    • 2 Tbsp each stir-fry sauce and water
    • 1 tsp grated lemon zest
    • 1 Tbsp lemon juice


    PREPARATION
    1. Sprinkle cornstarch over pork; toss until coated. Heat 1 1/2 tsp of the oil in a large nonstick skillet . Add pork; stir-fry 3 to 4 minutes until cooked through. Remove.


    2. Heat remaining oil in skillet. Add bok choy, pepper and carrots; stir-fry 4 minutes until crisp-tender.


    3. Add pork and remaining ingredients; toss until hot.
