Any healthy chicken dinner recipes?

I'm not much of a cook, and I was wondering if anybody had any yummy low calorie chicken dinner recipes or ideas out there?

  • Before I really started cooking, one of my hubby's and my favorite chicken dishes was simply to put a really yummy seasoning on boneless/skinless breasts and pop them in the convection oven until done (30ish minutes @ 350.) Even now that I cook more we still do that often (with a big heaping pile of broccoli.)

    We use a salt-free garlic/herb seasoning (like a Mrs. Dash but the generic Safeway one is yummier IMHO) and a dash of something spicy, and it tastes great without being covered in any fattening sauces or cheese.

    Bonus: it's so easy just to season/bake that it works great on "I don't want to cook" nights to keep us away from fast food.

    It's just about grilling season! I love grilled chicken with mango salsa. Really filling and absolutely delicious. Chicken is marinated in olive oil and lime juice, with a little oregano, then grilled. Salsa is chopped mango, red bell pepper, jalapeño, red onion, and a little more lime juice. So tasty.

    It's time to grill. We love kabobs. We make them with skinless chicken breast, hunks of sweet red, orange, yellow, and green peppers, hunks of sweet Vidalia onions, and hunks of pineapple.

    Skewer that stuff and then baste it with some Teryaki marinade while they grill.

    Low fat, low calorie, BIG on flavor and taste.

    Sometimes we bake a potato and split it, to have with the kabobs.
