Feeling Your Oats Salmon Loaf
Time 45 minutes
Serves 8
Ingredients
2 - 15 1/2 ounce pink salmon, canned
1 cup oats, uncooked
1/4 cup Greek Yogurt
2 eggs
2 tbsp. lemon juice
1/4 cup minced onion
1/4 cup minced celery
1/4 cup grated carrot
2 tbsp. fresh parsley, chopped
1/4 tsp. salt
1/8 tsp. pepper
1/2 tsp Hungarian paprika
How to make it
Preheat oven to 350
Drain the canned salmon reserving the liquid in a bowl. Save about half of the liquid to saute the onion, celery and carrots and the rest to satisfy the cats squirming at your feet.
Some folks like to make the dark skin and bones disappear. I'm not one of those folks. It all gets mushed together.
Put the salmon, lemon juice, sauteed veggies, parsley, eggs, yogart, salt, oats and pepper into a big bowl and mix it all together well.
Press into lightly greased loaf pan and shake it good to settle it into the pan. Because I'm cooking for two, I use two mini-loaf pans so I have one for now and one for later.
Bake @ 350 for 40-45 minutes till knife inserted comes out clean.0 -
I don't have a recipe per se, but I combine a can of salmon and 1 egg, with bread crumbs and a little milk (evaporated is good, but regular works, too). Bake until firm and slightly browned on the outside. You can always add veggies to it. Easy peezy.0
