Any Diabetics around? HELP please!!

Can you tell me if this is ok for diabetic meal:
some spuds, lots of cauliflower, green beans, kidney beans, carrots, low fat cream, low fat milk, spices and feta cheese? Friend coming over today who's diabetic and I've no idea if the above is ok???

I am not adiabetic but have to eat like one for other reaons and spuds are on my do not eat list as well as kidney beans, carrots and all low fat products, low fat products most usually have the addition of sugar to make up for the loss in taste due to the loss of fat. Carbohydrate count would be a better indicator of what's acceptable for diabetics as higher carbs will cause a blood sugar spike and the carb count will always include the sugar but reading just sugar label won't always indicate the carbs. Hope that made sense.0 -
If you're cooking for a friend, why not ask her the type of foods she can or cannot eat. Everyone's diet is so unique to them. Better to ask HER than a bunch of strangers online.0

Rachel, thanks for the info. Will check out labels to make sure but don't think the cream had added sugar. Why are carrots and kidney beans off? As for the spuds, they're in there just not really that many. Hm... it's like 1/2 potato in each portion. All the above is made into a veg bake.0 -
Check the glycemic index for those things and then you may have a better idea of what will work. It's not that the beans and carrots are off its the cobination of things at one meal0

an example of a "usual" diabetic supper of a 1500 cal day would be... protein of 3-4 oz serving..... 2 starch servings... 2 fruit servings.... and 1 fat serving... 1 milk serving0

I follow the diabetic "plate" diet. Picture cutting the plate in half, then one side in half again. Fill the large section with low starch veggies like salad, spinach, asparagus, mushrooms, carrots etc. Then fill one small section with lean protein such as boneless skinless chicken breast, white meat turkey or fish. Fill the last section with a carb like whole wheat roll or pasta. Add a piece of fruit and you are all set. I have found it is the easiest diabetic diet to follow. I think it is awesome that you are taking your friends needs into consideration!0
