PCOS is depressing me!

I can't figure what I am doing wrong, I sent my daily diary to my personal trainer but I'm so frustrated
I eat (well what I consider to be) very healthy. For breakfast I usually have porridge or a cereal bar and sometimes almonds, then for lunch I'll have reduced fat houmous and vegetables and today I added four oatcakes and will usually have an afternoon snack of yoghurt or low fat choc mousse. For dinner I either have quorn, stuffed peppers or a baked potato. I drink the recommended allowance of water and eat a couple portions of fruit per day (been told to reduce fruit intake because of sugar) I usually have a small treat (piece of choc etc) and perhaps crackerbreads in the evening spread with Phildelphia. Sometimes I will drink diet coke or irn-bru.
I don't know if this is unreasonable? Or what I am doing wrong? I am trying so hard
I go to the gym when I can - which can be daily some weeks and two or three times a week. I try to go for long walks around 5-10 miles when I can (usually on weekends) and people say that they notice a difference - inches are going down BUT not a lot on the scale.
