I made this recipe up since I am always trying different ways to eat oatmeal and came up with this one last night. Ate it this morning and it was awesome and filling! Tasted a lot like banana bread.
Ingredients:
1 1/2 cups of oatmeal (I used rolled oats/Old Fashioned oats)
1 Cup of cottage cheese (I used 2% Daisy small curd)
2 bananas
Sweetener to taste (optional)
1/4 tsp Cinnamon
Place cottage cheese, bananas, and cinnamon into blender or immersion blender container. Then blend until cottage cheese and banana lumps are gone. You can add a small amount of water if the mixture is too thick to blend properly.
Put oats into a tupperware container and pour mixture over oats. Stir oats until mixture is covering the oats. Put oats in the refrigerator for at least an hour (overnight is best). Then heat and serve. Also can be eaten cold. Add sweetener if needed before serving. Serves 2 people, but easily could serve 3-4 in smaller portions for less calories.
Hope you enjoy this recipe as much as I did this morning. Here are the nutritional stats based on what I used. These values may increase or decrease based on the type of cottage cheese that you use:
