I LOVE chicken, ESPECIALLY grilled but i always have the exact same side of steamed veggies. Does anyone have a super quick, super easy recipe to change things up a little? I hate getting bored with low calories/healthy food and finding myself wanting something i shouldnt have :(

There's your problem, low calorie doesn't mean healthy, nor does high calorie mean unhealthy. Pick any recipe you want and just try and keep the day/week within your calorie goals.

It does adds some calories, but if you put your favorite veggies in a pan with a little olive oil or coconut oil, they taste great and cook up fast! It's a very nice change from steamed!

I usually add spices or condiments to my chicken to make the taste pop. For instance, Hy-Vee medium chunky salsa is 10 calories for 2 tbsp. Add that with some corn, and you've got a Mexican style meal. You can also buy petite cut diced tomatoes, chop up and onion, add a little garlic salt and pepper, and you've got an Italian chicken. You can also use light Italian dressings instead of oil to cook your chicken, adds great flavor and is 15 calories for 2 tbsp. If it's the veggies that are the problem, try eating them raw with whatever you decide to do with your chicken. Completely changes the taste and consistency, so although you're eating the same thing, you don't even notice! :)

Skinnytaste.com is the best resource I know for easy healthy meals, she has lot of chicken recipes worth trying.
