Reduced fat Reduced carbs potato salad

1 cup of regular potato salad has 358 calories 28g carbs, 21 g fat, 7 g protein and 3 g fiber
1 cup of this semi faux potato salad has 140 calories, 19g carbs, 4 g fat, 8g protein and 3 g fiber ..and it's tasty!
Potato - New Red Skin, Small, 1 lb - quartered
Hard Boiled Egg - Large, 4 egg
Cauliflower - Raw, 0.5 head, medium (5-6" dia) - diced OR if you don't like crunch, boil the cauliflower also
Veg - Green Onion, 3/4 cup - sliced
Chobani - Greek Yogurt Plain Non-Fat, 4 oz
Backyard Gardens - Hot Banana Pepper Mustard, 2 T
Hot Peppers - Hot Banana Pepper Rings - diced
Generic - Balsamic Vinegar, 1 t
Celery - Raw, 1 stalk large (11"-12" long) - diced
Hellman's - Mayonnaise, 4 tbsp (15mL)
Boil and peel eggs - chop coarsely. Boil potatoes until tender and drain. Dice cauliflower, onions, hot pepper rinds and celery. combine mayonnaise, yogurt and a splash of balsamic vinegar. Add splash of juice from hot pepper rings if desired. Add salt and pepper to taste. If it's a little dry, add a T or so of additional Greek yogurt.

Add the really nice thing is that the little red-skinned potatoes don't seem to spike my blood sugar the way an Idaho does :-)0
