Sorry I am on my Kindle and I don't get to see all of the title when I type it. OOPS, NEW WORD!
This was taken from my blog where I post recipes.
If you know me you know I love flax meal, it's good for you, it's low carb and it's gluten free but you can only make so many things with flax meal right? WRONG!
I miss doughnuts! I can't even lie about it, I live right around the corner from a doughnut shop and the smells in the morning make me crazy but especially the smell of hot apple fritters! While I was supposed to be doing a weeks worth of biology yesterday all I could think about was how badly I wanted one of those sweet apple, cinnamon fried bits of sugary love. Then reality hit and I remembered I'm supposed to be healthy. So I give to you my HEALTHY apple fritter!
This will make one large or 2 small apple fritters
1 half of small apple peeled and diced (about 40g)
Sautee these in a pan with a tsp of butter or oil, some sweetener and a sprinkling of cinnamon
1/4 cup flax meal (I used golden)
2 tsp. sweetener (I used truvia)
1. tsp cinnamon
1/2 tsp baking powder
1 tsp. melted butter
1 egg
In a small bowl mix your dry ingredients well, then add in the butter and egg and mix well again.
Fold in the apples, your mixture should look like it has too many apples.
Take a microwave plate and drop small spoonfulls onto the plate, careful not to pile them. There can be small spaces between your drops it will rise and fill in.

Microwave for 1 minute, if it looks dry, turn it over and microwave another 20 seconds, if its still wet then add another 15 seconds until it's dry then flip and do 20 seconds, this is so the bottom is not wet.

At this point you can either fry those babies up to get than nice crisp on the outside or eat as is. If you choose to fry you only need about 30-45 seconds per side at 350
These were fried, I like that crispy outer coating on mine

When it's done place on paper towel to absorb any moisture
*Optional*lightly spray with calorie free butter spray or brush with coconut oil and sprinkle on a little sweetener and cinnamon to your liking!
As one serving mine had 272 calories 10g protein 15 cabs and 7 fiber (carbs are from apple)

Well I tried. Mine didn't rise. I'm not sure what I did wrong. I've had this recipe open since it was posted
as it excited me. My outcome isn't as good as I hoped, but I'll try it again.

Hmmm I have never had them not rise, you used baking powder and not soda right? Could you have cooked them too long? If you over cook they will flatten back out, next time watch very carefully and when you see that they are not wet looking anymore stop them and test with a toothpick.0
