Amazing Brown Rice/ Bean & lime Meal!

Apologies to those of you who are already very familiar with the joy of beans haha, but i just made the most delish meal and wanted to share.

Cup of brown uncooked rice
Half tin chopped tomatoes
Half tin green lentils
Half tin mixed beans
Half tin chickpeas
Juice of half a lime
Half a red pepper
60g (around 10) button mushrooms
Garlic clove grated

Cook rice, fry or bake pepper, garlic, and mushrooms (can add onion too), microwave all the beans for 3 mins, mix all this in with rice and stir in the chopped toms and lime juice. Warm through and serve. I had mine with a salmon fillet and cottage cheese but honestly it's a meal in itself. Came to around 800 calories (view my diary for more info) altogether and high in protein!
