Passover Cookies (actually good.)

Here is a recipe for Kosher for Passover cookies that actually taste decent. Way more enjoyable for dessert than those things Manischewitz tries to pass as "cake." Not exactly low-calorie, but maybe you can alter the recipe to be so.


2 eggs
2 sticks margarine or butter
1 tsp baking soda
1 tsp salt
1 tsp vanilla
1 ½ cups sugar
2 ½ cups “pesach flour”
1 bag chocolate chips
Cream margarine, and sugar. Add eggs, soda, salt and vanilla. Mix until smooth.
Add flour a little at a time. Add chocolate chips.

Bake 350 degrees until golden

PESACH FLOUR: mix equal amounts of potato starch and Passover cake meal. Mix in a Ziploc well. Substitute for flour above.

I don't remember how many the recipe makes, but the whole calorie count is 5900, so you can divide it out but how many cookies you make. I haven't yet tried using a lower-calorie substitute for the butter or the sugar.
